Cappuccino is made by using just the highly volumized (foamy) milk formed
when steaming the milk and which floats at the top of the milk in the
pitcher.

A little milk is poured into the espresso in the cup first, about one
third, then mostly the foamy milk is simply placed on top of the espresso.
The foam is usually heaped above the sides of the cup. You can use a
spoon to push the foam from the pitcher into the coffee cup. Some
people and cultures then add ground cinnamon or chocolate powder on top of
their cappuccinos.
